Noodle-lovers will enjoy this healthy, Korean-style dish that was once only to be found on a royal palace dining table. Japchae uses stir-fried glass noodles made from potato starch, mixed together with a variety of vegetables and sometimes meat. However, my recipe, which uses the instant version of japchae noodles you can buy in Asian supermarkets, will swap the meat for mushrooms, with an option to garnish with egg, depending on your dietary preferences.
