Chicken Potato Croquettes with Creamy Maida Sauce✨️

Ingredients

For Chicken Potato Croquettes

Boiled chicken (shredded) – 1 cup

Boiled potatoes (mashed) – 2 medium

Onion (finely chopped) – 1 small

Green chilies (chopped) – 1–2

Black pepper – ½ tsp

Salt – to taste

Garam masala – ½ tsp

Fresh coriander (chopped) –
For Coating

Maida (all-purpose flour) – ½ cup

Water – as needed (to make slurry)

Bread crumbs – 1 cup

Oil – for deep frying

For Creamy Maida Sauce

Butter – 2 tbsp

Maida (all-purpose flour) – 2 tbsp

Milk – 1½ cups

Salt – to taste

Garlic powder (optional) – ¼ tsp

Method

Croquettes

Heat butter or oil in a pan and sauté onions until soft.

Add green chilies and shredded chicken, mix well.

Add salt, black pepper, red chili powder, and garam masala. Cook for 2–3 minutes.

Turn off heat and mix in mashed potatoes and fresh coriander.

Let the mixture cool, then shape into cylinders or oval croquettes.

Make a smooth slurry with maida and water.

Dip each croquette in slurry, then coat with bread crumbs.

Deep fry in medium-hot oil until golden and crispy. Remove on paper towel.

Creamy Maida Sauce

Melt butter in a pan on low heat.

Add maida and cook for 1 minute without browning.

Gradually add milk while whisking continuously to avoid lumps.

Add salt, pepper, and garlic powder.

Cook until thick, smooth, and creamy.
