Carrot Cupcakes with Cream Cheese Frosting 🥕
🍁 Soft, fragrant, and full of cozy autumn flavors - these carrot cupcakes are moist inside, lightly spiced, and perfectly balanced with the freshness of orange zest. Each bite melts in your mouth and feels like a little homemade comfort.
Makes 9-12 cupcakes
For the batter:
150 g flour
1 tsp baking powder
1 tsp cinnamon
A pinch of ginger or nutmeg (optional)
60 g walnuts
2 eggs
140 g sugar
100 g vegetable oil
150 g grated carrot
Zest of 1 orange
For the frosting:
300 g cream cheese
100 g butter
50 g powdered sugar
A bit of vanilla or lemon zest to taste
How to make:
1. Beat the eggs, sugar, and a pinch of salt until light and fluffy.
2. Add vegetable oil and orange zest, mix on low speed until smooth.
3. Add all dry ingredients (flour, baking powder, cinnamon, spices, and crushed walnuts) and mix briefly on low speed - just until combined.
4. Fold in the grated carrot gently with a spatula.
5. Fill cupcake liners a little more than halfway. The batter is dense and won’t rise too much.
6. Bake in a preheated oven at 170°C / 340°F for about 25-30 minutes. Check doneness with a toothpick.
7. For the frosting, beat butter, powdered sugar, and vanilla extract until fluffy, then add the cream cheese and beat again until smooth and creamy.
Top the cooled cupcakes with the frosting and a sprinkle of walnuts or cinnamon.
