Slow Roast Leg of Lamb | Tender, Juicy & Full of Rosemary Flavour
This slow roast leg of lamb is tender, juicy, and infused with garlic and fresh rosemary. A simple oven method, low effort, and beautiful results — perfect for a calm weekend meal or a special family dinner.

🧺 Ingredients
• 2.5 kg leg of lamb
• 2–3 garlic cloves
• A few sprigs of fresh rosemary
• 50 ml olive oil
• Salt, to taste
• Freshly ground black pepper, to taste

🔪 Preparation
1. Use a small sharp knife to make small pockets all over the leg of lamb.
2. Rub the lamb with olive oil and season generously with salt.
3. Cut the garlic into thin sticks and push them into the pockets.
4. Add rosemary sprigs into the cuts.
5. Finish with freshly ground black pepper.
6. Wrap the lamb tightly in baking paper.
7. Roast at 200°C (392°F) for 30 minutes, then reduce the temperature to 150°C (302°F) and cook for about 2.5 hours until tender.
8. Carefully remove the baking paper, increase the oven temperature to 200°C (392°F), and roast the lamb uncovered for 10 minutes, until the outside is nicely browned.

🍽 Serving Suggestion
Serve with roasted vegetables, potatoes, or a simple green salad. The lamb is also delicious the next day in sandwiches or wraps.
