Welcome back, friends! This week I’m sharing a realistic week of whole-food meals from my busy kitchen as a twin mom. I’m cooking simple, from-scratch recipes that are budget-friendly, toddler-approved, and easy enough for any busy family.

cottage-cheese egg bake (my take on Starbucks egg bites) -- makes 6 servings:
-2.5 cups egg-whites
-3/4 c cottage cheese
-6 links turkey sausage
-spinach
-salt and pepper to taste

freezer-friendly pumpkin waffles:
-2 cups flour
3 tsp baking powder
-1/2 tsp baking soda
-1/4 tsp salt
-1/2 tsp cinnamon
-1 cup (ish) pumpkin puree
-1 1/2 cup milk
-2 TBSP neutral oil
-1 egg
homemade hummus :
-2 cups chickpeas
-1 tbsp garlic
-2 tbsp tahini
-1 tsp salt
-1/2 tsp cumin
juice from half lemon
approx 1/2 cup olive oil (or more)
1 or 2 tbsp water optional

follow this same recipe but brown the butter in a saucepan instead of softenting. when dough is fully combined, refridgerate for 1 hour before putting on baking sheet
