This is my favorite summer dessert: buttery, flaky pastry + creamy, almond frangipane + juicy summer stone fruit.
The original recipe comes from David Lebovitz via Fine Cooking. I make the pastry in the food processor, however, and I use a tea towel to shape the pastry into a round, a trick I learned from a French woman years ago.
The tea towel trick achieves two things: it ensures you don't over work the dough (because you remove it from the processor when it is still crumbly), and it gives you a perfectly circular shape, a great starting point for pies and galettes.
