50毫升奶水(温)/ 50 mls milk (warm)
🌿 材料
面团部分:
中筋面粉:500 克 【过程有加80克面粉】
斑斓汁:240 毫升(用斑斓叶12叶打汁)
糖:80 克
白油(或植物油):1汤匙
椰丝馅料:
椰丝(新鲜或冷冻):300 克
糖:100 克
斑斓叶:5 片
水:150 毫升
面粉:1汤匙
盐:少许
🍃 制作步骤
椰丝馅(可提前准备):
在锅中加入水、糖和斑斓叶,小火煮至糖完全融化。
加入椰丝,拌炒至水分收干,椰丝变得香浓湿润。
移除斑斓叶,放凉备用。
面团:
把面粉、将酵母水,糖、油混合,再加揉10分钟成光滑面团。
包包子:
将面团排气,分成小份(每个约30-40克),搓圆。
擀小面团成圆形后放入适量椰丝馅,收口捏紧成包子形状。
放在防粘纸上,静置二次发酵40分钟。
蒸制:
蒸锅水烧开后,包子放入蒸屉,中火蒸约10-12分钟。
蒸好后不要立即开盖,焖5分钟再开,防止包子塌陷。

斑斓汁做法:将数片斑斓叶剪碎,加入少许水用搅拌机打成汁,过滤取汁。
椰丝可依喜好添加少许椰奶提香。

Dough:
All-purpose flour: 500g (additional 80g added during process)
Pandan juice: 240ml (made from blending 12 pandan leaves)
Sugar: 80g
White shortening (or vegetable oil): 1 tablespoon
Coconut Filling:
Grated coconut (fresh or frozen): 300g
Sugar: 100g
Pandan leaves: 5 pieces
Water: 150ml
Flour: 1 tablespoon
Salt: a pinch
🍃 Instructions
Coconut Filling (can be prepared in advance):
In a pot, combine water, sugar, and pandan leaves. Simmer over low heat until the sugar fully dissolves.
Add grated coconut and stir-fry until the mixture is thick and fragrant, and the liquid is mostly absorbed.
Remove pandan leaves and let the filling cool for later use.
Dough:
Mix flour, pandan juice (with dissolved yeast), sugar, and oil. Knead for about 10 minutes until a smooth dough forms.
To Make the Buns:
Punch down the dough and divide it into small portions (about 30–40g each), then roll them into balls.
Flatten each ball into a round wrapper, place some coconut filling in the center, then pinch to seal and form into a bun shape.
Place on parchment paper and let rest for a second rise for about 40 minutes.
Steaming:
Bring water in a steamer to a boil. Place the buns in the steamer basket and steam over medium heat for 10–12 minutes.
After steaming, do not open the lid immediately. Let the buns sit for 5 more minutes to prevent collapse.
🔖 Tips
How to make pandan juice: Chop pandan leaves, blend with a small amount of water, and strain to extract the juice.
You may add a bit of coconut milk to the filling for enhanced aroma if desired.
