Mexican street corn pasta salad is such a delicious and exciting mix of flavors. You get the best of both worlds because you can taste the freshness from a pasta salad and the street corn flavors. The cotija cheese takes it to another level of goodness and with every bite you can enjoy a kiss of sweetness from the perfectly cooked corn. The dressing is citrusy with the perfect balance of lime. Mexican street corn pasta salad recipe

8 oz cellentani pasta or rotini pasta

Vegetables
3 corn ears
2 TBSP olive oil
1/2 tsp salt, kosher
2 bell peppers (red and green)
1/4 large red onion
1/3 cup cilantro

Dressing
1/2 cup sour cream
1/2 cup mayonnaise
2 TBSP Lime juice
1 lime zest
1/2 cup cotija cheese
1 tsp salt, kosher + to taste at the end
Black ground pepper, to taste

Optional: Top with ground dry arbol chili or ground dry piquin chili.
