Preserving the Harvest Freezer Meals, Baba Ganoush, and Frozen Peppers

Hi friends! I hope you're all doing well. As some of you probably saw last week, I did a big end of October garden harvest and I've been making the best of all of the goodies I pulled from the garden. One of the ways I like to do that is putting ready made meals in the freezer. Today we're making 4 casseroles to put in the freezer for later! Three chili relleno casseroles and an eggplant parmesan. I also got 4 - 8oz bags of green chilis put in the freezer, more ripe hot peppers frozen for making hot sauce at a later time and some baba ganoush to have with the lamb meatballs we have in the freezer already!

Overall, I'm so happy with how this all turned out. It's so much food that's either ready to go convenience meals or ingredients that are easily accessible. This will make mealtimes on busy days less stressful!
