A rich layered chocolate dessert made with silky dark chocolate mousse, creamy praline mousse, and a soft chocolate cake base — an elegant European-style dessert that’s surprisingly easy to make.
🍫 Chocolate Cake Layer
Ingredients:
• 2 eggs
• 215g flour
• 115g vegetable oil
• 30g cocoa powder
• 160g sour cherry juice
• 145g powdered sugar
• ⅛ tsp salt
• ¼ tsp vanilla
• 1 tsp baking powder
Instructions:
1. In a bowl, whisk together eggs, powdered sugar, and vanilla until creamy.
2. In another bowl, mix cocoa powder and sour cherry juice, then add oil and stir well.
3. Combine both mixtures and whisk until smooth.
4. Sift flour, baking powder, and salt into the batter and gently fold until fully combined.
5. Pour the batter into a 20×30 cm pan, lined or greased.
6. Bake in a preheated oven (180°C / 350°F) until fully cooked.
7. Let cool completely, then remove from the pan and cut into layers or squares.
🍮 Dark Chocolate Mousse
Ingredients:
• 3 egg yolks (50g)
• 127g milk
• 26g sugar
• 245g dark chocolate
• ½ tsp vanilla
• 2 tbsp cornstarch
• 190g whipped cream
Instructions:
1. In a pot, mix egg yolks, sugar, cornstarch, and milk.
2. Cook over a double boiler (bain-marie) while whisking constantly until slightly thickened.
3. Add dark chocolate and stir until smooth.
4. Remove from heat, let it cool slightly, then add vanilla.
5. Fold in whipped cream until fully combined and creamy.
6. Transfer to a piping bag and refrigerate until assembling.
🥜 Praline Almond & Hazelnut Mousse
Ingredients:
• 145g roasted almonds & hazelnuts
• 130g sugar
• 56g condensed milk
• 185g whipped cream
• 210g praline paste (made from nuts above)
Instructions:
1. In a saucepan, melt sugar until golden caramel forms.
2. Add roasted almonds and hazelnuts, mix well, and spread on a silicone mat.
3. Once cooled, break into pieces and grind into a smooth praline paste.
4. In a bowl, whisk whipped cream and condensed milk together until creamy.
5. Add praline paste and fold until smooth.
6. Transfer to a piping bag and keep in the fridge until assembling.
🍰 Assembling the Dessert
1. Spread a thin layer of chocolate mousse at the base of your serving dish.
2. Place a layer of chocolate cake on top.
3. Add another layer of chocolate mousse, then praline mousse.
4. Finish with a final swirl of dark chocolate mousse.
5. Decorate with crushed praline, nuts, or chocolate shavings.
6. Chill in the fridge for at least 1 hour before serving.
