Meal prep with me! I prep a breakfast, lunch, dessert for the week! ♥️ I have lost 30 lbs by eating a healthy, low cholesterol & relatively low carb diet!
Breakfast:
Ham & Cheddar Biscuits
6 eggs
1/2 cup cottage cheese
11/2 cup almond flour
1 1/2 cup cheddar cheese
4 thick slices of ham
Salt, pepper, garlic powder to taste
1 tsp of baking powder
Bake 375 for 25-30 mins
(I cut this in half! Recipe from @AllisonMustLoseWeight )
Lunch:
Chicken Enchiladas
1/2 rotisserie chicken, shredded
1 cup greek yogurt
1 can green chiles
2 cups cheese of choice
1 can heart healthy cream of mushroom soup
1/2 cup chicken broth
Seasonings of choice
6 low carb tortillas
Mix chicken, chiles, cheese, & yogurt.
In a saucepan, heat up soup & broth with seasonings.
Put a small layer of sauce in a 13x9 pan.
Roll tortillas filled with chicken mixture.
Pour sauce over enchiladas.
Top with cheese.
Bake @ 350 for 20 minutes.
Dessert:
Grain free pumpkin cookies
