Ingredients :
The Steak:
• 1 Cabbage head,
• 2 tbsp Olive Oil,
• Spices.
Vegetable Medley:
• 1 Leek, 2 Red Onions,
• 2 Bell Peppers,
• 3.5oz (100g) Mushrooms,
• 3 Garlic cloves,
• 50g Butter.
The Marinade:
• 1 tbsp Dijon Mustard,
• 1 tbsp Soy Sauce,
•1 tsp Honey.
Velvet Puree:
• 14oz (400g) Pumpkin,
• 5oz (150g) Cauliflower,
• Garlic,
• Parsley,
•Lemon zest.
Zesty Sauce:
• 70ml Natural Yogurt,
• 1 Garlic clove,
• Parsley,
• 1 tsp Capers.
Instructions:
Roast the cabbage at 350°F (180°C) for 20 minutes.
Pan-fry the veggies in butter, add the honey-mustard marinade.
Blend the pumpkin and cauliflower into a smooth puree.
Top with the refreshing yogurt-caper sauce!
