Chicken Shami Kabab – A classic, flavorful kabab made with minced chicken, lentils, and aromatic spices.

Lacha Shami Kabab – A unique, crispy variation of Shami Kababs with a textured, flaky coating.

Recipes:
Chicken Shami Kebab
Ingredients:
Chicken mince 500 grams
Boiled chickpeas 125 grams
Onion (chopped) 1 large
Whole garlic cloves 6 to 8
Ginger (sliced) 3 tbsp
Onion (sliced) 1 large
Green chilies (chopped) 8
Whole garam masala 3 tbsp
Ground red chili 2 tbsp
Oil for frying
Salt 1 tbsp
Boiled potatoes (sliced) 2
Method:
In a cooking pot, add chicken mince, dal, sliced onion, garlic, ginger, whole garam masala, salt, ground red chili, and potatoes. Cook with 2 cups of water for 30 minutes. Then, on high heat, cook until the water evaporates. Remove the mixture and let it cool and dry. Once cooled, grind it in a grinder. Add chopped green chilies and chopped onion, mix well, and form into kebabs. Heat oil in a pan and fry the kebabs on both sides for 5 minutes. Serve hot.
Galawati Shami Kebab
Ingredients:
Beef mince 1 kg
Raw papaya (peeled) 200 g
Boiled chana dal (paste) 250 g
Garam masala powder 3 tbsp
Red chili powder 1 tbsp
Onion (chopped) 1½ large
Garlic powder 1 tbsp
Ginger powder 1 tbsp
Salt 1 tbsp
Coriander (chopped) 1 bunch
Bread crumbs 1½ cups
Green chilies (sliced) 8 pieces
Kashmiri red chili powder 3 tbsp
Oil for frying
Crushed red chili as needed
Method: Mix all ingredients, except oil, and boil them well. Marinate for 4 to 6 hours and then shape into kebabs. Heat oil in a pan and fry the kebabs for 6 to 8 minutes on each side. Serve hot.
Lachha Shami Kebab
Ingredients:
Beef (boiled and shredded) 1 kg
Boiled chickpeas 250 grams
Whole garam masala 3 tbsp
Onion (sliced) 1 large
Garlic (sliced) 2 tbsp
Ginger (sliced) 2 tbsp
Crushed red chili 3 tbsp
Salt 1 tbsp
Onion (chopped) 2 large
Kashmiri red chili paste 1 cup
Oil 1 cup
Method:
In a cooking pot, heat ½ cup of oil and add sliced onion, garlic, ginger, and whole garam masala. Cook until golden brown. Now add beef, crushed red chili, Kashmiri red chili paste, salt, and 2 cups of water. Cook for 30 minutes. Then remove the lid and cook until the water evaporates. Mix well. Now place the mixture in a tray and grind it in a stone grinder (sil batta). Form the mixture into kebabs and fry them for 4 minutes on both sides in oil. Serve hot.
