今天带来一道非常下饭的菜,这是一个夫妻肺片的素食版本,我是川渝人,以前特别爱吃它。当我以为再也吃不到它后,直到我做了这个素食版本,发现它的味道丝毫不逊色,并且做法会简单很多,试试看,碗里的饭不知不觉又没有了...
This is a vegetarian version of Fuqi Feipian (aka. Mr.& Mrs.Smith) I am from Sichuan, so I made this vegetarian version. I found that the taste is not inferior compared with the traditional version, and the method is also much simpler. Why not give it a try?
Ingredients/材料:
杏鲍菇 350g King Oyster mushroom
鲜豆筋 100g(或者用干豆筋泡20小时)Fresh Tofu skin 100g (or soak dried tofu skin in water for 20 hours)
芹菜 100g Celery
熟花生碎 两大匙 2 Tbsp chopped cooked peanuts
香菜 适量 Coriander to taste
胡萝卜 35g Carrot 35g
豆筋卤料/Soaking seasoning for Tofu skin:
八角 1.5个 One and a half star anise
香叶一片 1 Piece of bay leaf
桂皮 一小块 A Small piece of cinnamon
酱油 一大匙 1 Tbsp soy cauce
调味料/Seasoning:
红油 一大匙 1 Tbsp chili oil
生抽 两大匙 1 Tbsp soy sauce
糙米醋 一小匙 1 Tsp brown rice vinegar
赤砂糖 ½小匙 1/2 Tsp brown sugar
花椒油 一小匙 1 Tsp Sichuan pepper oil
煮豆筋的水 4-5大匙 4-5 Tbsp water/stoke
TIPS:
1.豆筋也叫作豆杆,蛋白值很高很有嚼劲,是四川隆昌的一种特产,一般超市有卖干豆杆,没有网上也有卖,也可以用腐竹或者豆皮代替。
