Badami Chicken Pasanday:
Marination ingredients:
Chicken fillets (pasanday) ½ kg
Kachari powder 1 tsp
Salt 1 tsp
Ginger garlic paste 1 tbsp
Oil 2 tbsp
Yogurt 2 tbsp
Garnishing ingredients:
Finely cut almond as required
Ginger as required
Masala ingredients:
Clarified butter ½ cup
Fried onion paste ½ cup
Yogurt ¾ cup
Salt as required
Cream ½ cup
Almond powder 1 tbsp
Red chili powder as required
Turmeric as required
All spices powder ¾ tsp
Coriander powder 1 tbsp
Cardamom powder ¼ tsp
Whole spices 1 tbsp
Method:
All marination ingredients mix in chicken pasanday and leave for 1 hour .now in clarified butter add whole spices and fry .then add salt ,red chili powder ,turmeric ,cardamom powder ,coriander powder and yogurt add and masala roast .after this marinated pasanday mix and further roast .now 1/2cup of water, cream almond powder ,fried onion and all spices add and leave on dum .finally remove and garnish with almond and ginger and serve .
Fry Aalu Mirch:
Ingredients:
Boiled potatoes 2 cups
Crushed coriander ,cumin 2 tbsp
Mango powder 1 tbsp
Red chili powder 1 tsp
Turmeric ½ tsp
Oil ½ cup
Green chili 10-12
Chopped onion 1 large
Salt as required
Fennel seeds ¾ tsp
Nigella 2 pinch
tomato paste 1 large
method:
potatoes cut in thickly fries and boil half tender .now green chilies cut in long .after this in a pan heat oil and fry onion .then add tomato paste ,salt ,red chili powder and turmeric and roast the masala and add potatoes then leave on dum for 5 minutes .finally add mango powder ,coriander ,cumin ,fennel seeds ,black caraway and long cut green chilies then roast and dish out .
Sawaiyon ka Mutanjan:
Ingredients:
Vermicelli 2 cups
Sugar 1 cup
Milk 1 cup
Small cardamom 3-4
Whole dried milk ¾ cup
Mix dried fruits ½ cup
Clarified butter ¾ cup
Food colour as required
Tutti Frutti 2 tbsp
Sterling Silver paper 1
Mix chum chum ¾ cup
Screwpine essence few drops
Method:
Clarified butter heat and fry small cardamom .now vermicelli lightly fry .then add sugar milk and food colour add and mix and leave on dum till than vermicelli tender .now add screw pine and few dried milk mix .then dish out and remove .now mix dried fruit ,tutti frutti ,mix chum chum ,remaining whole dried milk and garnish with silver paper .
