Recipe:
8 cups chopped cored pears with skin(approx 3 lbs)
3 each red and green bell peppers or a combination of sweet and hot to your taste chopped in food processor
3/4 cup granulated sugar
2 Tbsp pickling salt
2 tsp dry mustard
1 tsp tumeric
1/2 tsp EACH ground allspice and black pepper
1 cup white or apple cider vinegar
All all ingredients to a large pot and bring to a boil stirring constantly. Reduce heat, boil gently stirring occasionally for about 5 minutes.
Fill prepared jars (1/2 pint) leaving 1/4 to 1/2 inch headspace. Debubble, wipe rims, place on new canning lids and secure ring lightly.
Process in water bath canner for 15 minutes
Yield: 8 - 1/2 pint jars
