Egg Malai Curry | Egg Malai Masala | अंडा मलाई मसाला | Creamy Egg Gravy | Anda Malai Masala | Anda Malai Curry | Creamy Egg Curry | Egg Malai Masala By Spice Eats
Ingredients for Egg Malai Curry:
(Tsp- Teaspoon; Tbsp- Tablespoon )
Eggs- 4 (boiled, shelled, cut in halves)
For Onion-Chilli paste:
Onions - 2 medium, thick sliced (150 gms)
Green chillies, cut - 2
Spice Powders:
Cumin (Jeera) powder - 1 tsp
Pepper powder - 1/2 tsp
Garam Masala powder- 1 tsp + a pinch
Other Ingredients:
Ginger-Garlic paste - 1 tsp
Cow Milk - 200 ml (boiled and cooled to room temperature)
Coriander leaves - 4 tbsp (finely chopped)
Salt - 1 tsp or to taste
Preparation:
Boil the eggs, shell & cut into halves
For the Onion-Chilli paste, add the thick sliced onions & green chillies into a grinder & blend into a paste
Fine chop the coriander leaves
Process :
In a kadhai, heat oil & once medium hot, add the onion-green chilli paste. Fry on medium low heat for 2 mins.
Now add the ginger-garlic paste & mix well
Keep cooking on low heat , stirring often, for around 15 mins till paste changes colour
Now switch off the heat & add the milk stirring continuously. Mix it well with the Masala
Switch on the heat & cook on low heat for around 2-3 mins till oil separates
-Now add the cumin powder, pepper powder, garam masala powder & salt . Mix well & cook on low heat for another 2-3 mins till oil separates.
Now place the egg halves in the gravy, yolk side down to absorb the spices.
Cover & cook on low heat for 3 mins
Now remove lid and turn the egg halves yolk side up.
Add the finely chopped coriander leaves and mix well.
Also sprinkle a pinch of garam masala powder, mix gently and simmer on low heat for a minute till oil separates
Serve, enjoy with rice or roti
