First Step
Take the required amount of semolina (suji) in a bowl and keep it aside.
Prepare the pan
Heat a pan/kadai and add a little oil.
When the oil becomes warm, add cumin seeds and let them splutter.
Now add water.
Add spices
To the water, add:
Chilli flakes
Fresh coriander
Salt
Mix well and let the water come to a boil.
Cook the semolina dough
Once the water is hot, add the semolina while stirring continuously.
Cook until it becomes thick and forms a tight dough.
Turn off the heat and transfer the dough to a plate.
Add boiled potatoes
Take 2 boiled potatoes, mash them well,
and add the mashed potatoes to the warm suji dough in the plate.
Mix everything together nicely.
Knead the dough
When it cools slightly, knead the dough well until smooth and combined.
Shape the rings
Take small portions of the dough and make small balls.
Press your finger in the center to make a hole and shape them into rings.
If the dough becomes too soft
Add:
2 tsp rice flour
2 tsp semolina
2 tsp cornflour
This will make the dough tight and perfect for shaping.
Fry the rings
Heat oil and fry the rings on medium flame until they turn golden, crisp, and crunchy.
