HALAL SALMON TERIYAKI DON | SHERSON LIAN

For the Japanese food lovers out there, here's a dish that's sure to delight and impress! In this episode, I'll be making the Halal Salmon Teriyaki Don, also known as Salmon Teriyaki Rice Bowl, served alongside the Taiwanese Cucumber Pickle. It's rich, mildly sweet, savoury, beautifully charred, and succulent.

Ingredients:
PART 1 (RICE)
2 cups - Japanese Rice
2 cups - Water

Sushi Rice Vinegar
¼ cup - Rice vinegar
4 tsp - Sugar
1 tsp - Salt

PART 2 (CUCUMBER)
1nos - Japanese Cucumber - Cut into thick slices
1 tbsp - Salt
1 tbsp - Sugar
2 tbsp - Vinegar
1 tsp - Sesame Oil
1 tsp - Soy sauce
2 - Bird Eye chilies


PART 3 (SALMON)
2 tbsp - Japanese soy sauce
2 tsp - Brown Sugar
2 tsp - Honey
1 tsp - Vinegar
1 tsp - Sesame Oil
1 clove - Garlic
15 gm - Ginger
250gm - Salmon


PART 4 (GARNISH)
Chilli oil
Tobiko
Ginger Pickle
Pickle cucumber
