For Plants’ Sake Creamy Ranch Dressing (Oil-Free, Low-Fat)
Ingredients:
1 cup unsweetened soy milk
1 tablespoon apple cider vinegar (to make vegan buttermilk)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt (or to taste)
1 teaspoon dried parsley
1 teaspoon dried dill (optional but recommended)
1 tablespoon agar agar flakes (for thickness — use 1 teaspoon if using agar powder)
1–2 tablespoons fresh parsley, finely chopped (add after blending)
Instructions:
Make the buttermilk: In a small bowl, whisk together the soy milk and apple cider vinegar. Let it sit for about 5 minutes to curdle and thicken slightly.
Blend the dressing base: Add the soy “buttermilk,” garlic powder, onion powder, salt, dried parsley, dried dill, and agar agar to a blender. Blend until smooth and creamy.
Thicken (optional): If using agar flakes, pour the blended mixture into a small saucepan and heat gently for 3–5 minutes, stirring constantly until slightly thickened. (Skip heating if using agar powder or prefer a thinner dressing.)
Add freshness: Let the mixture cool, then stir in the fresh parsley.
Chill before serving: Refrigerate at least 1 hour to allow flavors to blend and the texture to set.
💚 Meg Tip:
If you like a thinner pourable dressing, use only 1 teaspoon agar powder or skip the agar entirely. For a dip consistency, go with 1 tablespoon flakes.
