Most pathogenic or disease-causing bacteria grow best and very quickly at room temperature. Refrigeration slows down the growth of microorganisms to help prevent foodborne illness. To ensure the effectiveness of this prevention strategy, the temperatures of refrigeration equipment must be checked regularly and often.
