【純素石鍋拌飯】2人份|【Vegan Bibimbap】2 Serves
食材|Ingredients:
紅色彩椒半個約150克|Red bell pepper, half (about 150g)
西葫蘆約150克|Zucchini (about 150g)
黃豆芽150克|Yellow bean sprouts (150g)
花椰菜150克|Cauliflower (150g)
小白菜150克|Bok choy (150g)
胡蘿蔔1根約200克|Carrot, 1 root (about 200g)
紫甘藍150克|Red cabbage (150g)
豆腐乾150克|Dried bean curd (150g)
綜合菌菇200克|Mixed mushrooms (200g)
即食海苔4張|Instant seaweed, 4 sheets
熟芝麻4湯匙|Roasted sesame seeds, 4 tablespoons
醬汁|Sauce:
自製辣白菜300克|Homemade kimchi (300g)
韓式辣椒粉2湯匙|Korean chili powder, 2 tablespoons
薑茸1湯匙|Minced ginger, 1 tablespoon
胡椒粉1茶匙|Black pepper, 1 teaspoon
生抽2湯匙|Light soy sauce, 2 tablespoons
老抽1湯匙|Dark soy sauce, 1 tablespoon
麻油2湯匙|Sesame oil, 2 tablespoons
準備食材|Prepare the Ingredients:
1. 把薑磨成茸,需要薑蓉1湯匙|Grate ginger to make 1 tablespoon of ginger paste.
2. 辣白菜放入料理機,加入辣椒粉,低速攪打成粗辣椒醬|Put kimchi in a blender, add chili powder, and blend on low to a coarse paste.
3. 所有菌菇、蔬菜、豆腐乾全部處理成條狀或絲狀|Slice all mushrooms, vegetables, and dried tofu into strips.
4. 豆芽摘掉根部|Remove the roots from the bean sprouts.
製作過程|Cooking Process:
1. 把所有淺色蔬菜分別加入少許香油、醬油炒香,最後加入熟芝麻拌勻分別盛出|Stir-fry all light-colored vegetables separately with a little sesame oil and soy sauce, then add roasted sesame seeds, mix well, and serve.
2. 深色蔬菜只加入香油、鹽、熟芝麻炒香,不加醬油,保持鮮豔的色澤,分別盛出|Stir-fry dark-colored vegetables with sesame oil, salt, and roasted sesame seeds without soy sauce to keep their vibrant color, then serve separately.
3. 鍋底部抹芝麻油,放入米飯鋪平|Coat a pan with sesame oil, add rice, and spread evenly.
4. 菌菇放中間,蔬菜按照喜好的色彩搭配擺放入鍋,盡量深淺搭配|Place mushrooms in the middle, arrange vegetables around in a color-coordinated fashion, trying to mix light and dark colors.
5. 蓋上鍋蓋,開大火,聽到滋滋聲後,順著鍋的邊緣倒入剩餘的麻油|Cover with a lid, turn on high heat, and once you hear a sizzling sound, pour the remaining sesame oil along the edge of the pan.
6. 改小火,燜5-10分鐘,直到鍋底形成鍋巴,如果喜歡鍋巴多一些,可適當延時,注意觀察,不要燒糊|Lower the heat and simmer for 5-10 minutes until a crust forms at the bottom of the pan. If you prefer more crust, extend the cooking time, but be careful not to burn it.
7. 在餐桌上放上防燙的墊子,把鍋放上去|Place a heat-resistant mat on the dining table and set the pan on it.
8. 掀開鍋蓋,剪入一些海苔,放上辣椒醬,撒上芝麻、香菜碎|Lift the lid, add some seaweed, spicy sauce, sprinkle sesame seeds, and chopped cilantro.
9. 從底部翻起攪拌均勻,即可食用,剛做好的石鍋拌飯很燙,請慢食|Stir from the bottom to mix everything evenly. The freshly made bibimbap will be very hot; please eat slowly.
