This Year the only sourdough hot cross bun you need is this one a great recipe inspired by Culinary Exploration
Its literally a hand off recipe and simply adjustable .
if you are in cold climate even better cause you can make it overnight . (Make your levain with 4G starter 40G water + 40G Flour and early morning and make the dough at night )
*TEMP is very important factor for any baking recipe specially this one .
Adjusting the recipe according your climate is so easy to fasten up the rising for both starter and the dough you can use little bit more of starter in freezing cold climate you can make a proofing atmosphere for your starter and the dough to rise properly ( inside the oven with the light on or an extra cup of hot water beside it )
Proofing time again depends on temp my room temp was between 26 to 28 consider as high temp.
Ingredients:
320G bread flour
240G Milk
70G Melted butter
70 Levain (4G starter + 33G flour+33G water)
14G sugar
14G barley Malt Syrup
7G salt
Mix spice ( ginger +cinnamon +all spice +nutmeg +mace)
Egg for egg brush
Honey Glaze ( tbs honey splash of hot water )
Cross (30G flour + 30G water )
