材料配方Ingredients:
奶茶 Milk Tea:
鮮奶 110克 / Milk 110g
伯爵茶包 3包 / Earl Grey tea bag 3 packet

伯爵戚風蛋糕 Earl Grey Chiffon Cake:
奶茶 65克 / Milk tea 65g
植物油 50克 / Vegetable oil 50g
蛋黃 4個 / Egg yolks 4pcs
低筋麵粉 75克 / Cake flour 75g
茶末 1包 / Tea dust 1 packet
蛋白 4個 / Egg whites 4pcs
砂糖 70克 / Sugar 70g
白醋或檸檬汁 2g / White vinegar or Lemon juice 2g

奶油糖霜Whipped cream frosting:
淡奶油 120克 (冷)/ Whipping cream 120g (cold)
砂糖 15克 / Sugar 15g
茶末 1包 / Tea dust 1 packet

製作步驟 Instructions:
1.將鮮奶和茶包放入鍋裏,開小火煮,用刮刀輕輕的攪拌。隨著牛奶的溫度上升, 奶茶的顔色慢慢的出來, 煮到冒熱氣和出現小氣泡,之後就可以離火了。蓋上鍋蓋,讓奶茶在鍋裏燜一會,同時讓奶茶降溫。
Put the milk and tea bags into the pot, cook at low heat, stir gently with a spatula. As the temperature of the milk rises, the color of the milk and the tea slowly emerges. Cook until there is hot air and small bubbles appear, then it can be removed from the fire. Cover the pot and let the milk tea simmer in the pot for a while, while allowing the milk tea to cool down.
2.預熱烤箱160攝氏度。
Preheat oven to 160°C.
3.將奶茶和植物油放入碗裏,攪拌混匀, 然後分兩次加入過篩的低筋麵粉攪拌混匀即可,不用過攪拌。分次加入蛋黃混匀,之後加入一份剛才煮過的茶末。
Place milk tea and vegetable oil into a bowl, stir well, then add the sifted cake flour in two times and mix well without over-stirring. Add the egg yolks one by one while stirring, then add a packet of the tea dust that used to cook for milk tea.
4.將蛋白放入攪拌盆中,用打蛋器打至出現大泡泡,加入1/3的砂糖攪拌至出現細泡泡后,再加入另外1/3的砂糖繼續攪拌至出現紋路及更加細膩, 之後加入剩餘的砂糖攪拌至堅挺狀態呈現小尖勾。
Place the egg whites in the mixing bowl, beat until large bubbles appear then add 1/3 of the sugar and beat until fine bubbles appear. After that, add in another 1/3 of the sugar and continue mixing until lines appear and more delicate, then add the rest of the sugar and beat until it shows a small stiff peak foam.
5.取1/3的蛋白霜加入蛋黃麵糊混合均匀, 之後將蛋黃麵糊倒入蛋白霜中繼續混合均匀,用翻拌的手法混匀。請勿過度攪拌以避免消泡。
Take 1/3 of the meringue and gently stir in the egg yolk batter , then pour the egg yolk batter into the meringue and gently mix well by turning and fold in method. Remember do not over mix the batter to avoid defoaming.
6.烤模裡鋪上烘培紙, 將麵糊倒入烤模裡, 表面用刮刀抹平,之後把烤模往桌子上輕敲幾下排出空氣。
Lined the baking paper in the prepared baking pan, pour in the batter, spreading evenly with a spatula, then gently tap the baking pan on the table a few times to remove air bubbles.
7.烤箱預熱160攝氏度烘烤25-28分鐘(根據自己的烤箱溫度調整時間)。烤箱中取出, 輕敲幾下排出空氣, 之後將蛋糕轉移到凉架上晾涼10分鐘。蛋糕晾涼至還有少許餘溫但不燙手的狀態,把邊緣的烘培紙輕輕撥開,在蛋糕表面放上一張烘培紙,然後將蛋糕翻面,撕開另一面的烘培紙,之後又將蛋糕再翻面。用手壓住蛋糕,提著紙往前卷起來,卷個開頭就可以了,後面無須卷起。用擀麵杖墊在蛋糕的下面,放涼備用。
Preheat the oven to 160°C, bake for 25-28 minutes (Everyone's oven is different, you have to adjust the temperature and baking time). Remove the cake from the oven, tap on the table a few times to remove air bubbles then transfer to a cooling rack and let it cool for 10 minutes. Let it cool until there is still a little residual temperature then gently remove the side of the baking paper, lined the baking paper on the surface of the cake, and turn the cake over, then tear off the baking paper and turn the cake over again. Gently press the cake with your hand, lift the paper and roll it forward. Place a rolling pin under the cake and let it cool for later use.
8.提前將攪拌盆和攪拌頭放入冷凍室15分鐘左右。將冷淡奶油,糖粉和一份茶末倒入攪拌盆裏攪拌至濃稠和堅挺狀態呈現小尖勾即可。
Put the mixing bowl and mixing head into the freezer for about 15 minutes in advance. Pour the cold whipping cream, icing sugar and one packet of tea dust into the mixing bowl and stir well until it is thick and firm.
9.在蛋糕上均匀的抹上奶油糖霜,蛋糕的邊邊抹薄一些。抹匀後,用手輕輕的壓住蛋糕,提起紙,往前卷。用一個薄的烘培刮板, 用手壓住下面的紙的同時, 朝前推刮板, 然後就會呈現一個渾圓的圓柱體。蛋糕底邊朝下,放入冷藏室冷藏2-3小時定型。
Spread the whipped cream frosting evenly on the cake, and spread the sides of the cake thinly. After spreading, gently press the cake with your hand, lift the paper, and roll it forward. Using a thin baking scraper, while pressing the paper underneath with your hand, push the baking scraper forward, then it will presents a perfectly round cylinder. Place the cake in the refrigerator for 2-3 hours to set.
10.蛋糕完全定型后,將蛋糕取出,之後就可以切片享用啦!
After the cake is completely shaped, take the cake from the fridge and slice it to enjoy!
