Ingredients:
1 medium carrot
3 egg whites + 1 egg yolk
Rice flour — 40 g
Baking powder — 3 g
Vanilla — 1 packet
Oat milk (1.5%) — 50 ml
Fat-free soft cottage cheese — 125 g
Light ricotta — 100 g
Sweetener to taste
How to make it:
Grate the carrot on a fine grater.
Add one whole egg, all the dry ingredients, and mix the base for the cake layers.
Pour in the milk and mix well.
In a separate bowl, whip 2 egg whites until stiff peaks —
you should be able to flip the bowl upside down and nothing moves.
You can discard the yolks.
Gently fold the egg whites into the carrot mixture in batches.
Transfer to a baking pan and bake for 25 minutes.
Cream:
Mix the ricotta and soft cottage cheese,
add sweetener, and whisk until smooth.
Take the cake out, let it cool,
then slice it lengthwise into 4 layers.
Assemble the cake:
