EASY SPANISH RICE
INGREDIENTS
1 cup Extra Long Grain White Rice
3 Tablespoon Grapeseed Oil
2 cups + 1/4 cups of water
1 Tablespoon Chicken Knorr
1 Teaspoon Sea Salt
1/4 Teaspoon Ground Garlic
1/4 Oregano
1/2 Teaspoon Ground Cumin
8 Ounces of Tomato Sauce
INSTRUCTIONS
1. In a large measuring cup pour 2 cups + 1/4 cup of water. To the water add the Chicken Knorr, Sea Salt, Oregano, Ground Garlic, and Ground Cumin and whisk until the knorr dissolves and set to the side.
2. In a medium heated pan add 3 Tablespoons of Grapeseed oil. Wait 1 minute until the oil heats up. Now add the rice and sauté until golden brown, you have to keep the stirring the rice do not let it burn.
3. Next add the tomato sauce and continue to stir for 1 more minute.
4. Carefully pour the broth mixture into the rice, be careful that you do not burn yourself with the splash back.
5. Carefully mix the broth evenly throughout the rice, and let rice come to an even rapid boil.
6. Cover and bring it down to a low simmer for 20 minutes. When the 20 minutes is up, set the pan aside to continue to cook with steam for 10 more minutes.
7. After 10 minutes uncover and fluff up the rice with a fork. Serve with your favorite meal, and enjoy.
HABANERO SPICY SALSA
INGREDIENTS
1 Habanero Chili
7 Jalapeños
1 Roma Tomato
3 Tomatillos
1/8 Teaspoon Ground Cumin
1/8 Teaspoon Oregano
1/8 Teaspoon Sea Salt
1 Small Chopped Garlic Clove
INSTRUCTIONS
1. Roast all chilis in broil setting up to 20-30 minutes until the veggies are fully roasted.
2. To a blender pulse the jalapeños, chopped garlic, and habanero. Then add the tomatoes and tomatillos and pulse again. The salsa should be very thick and chunky.
3. Add 1/4 cup of water to thin out the salsa and add the seasonings. Pulse again and stop the blender to taste and adjust seasonings.
4. Serve with your favorite tacos and tortilla chips. Enjoy!
SUPER MILD TOMATILLO SALSA
INGREDIENTS
6 Broiled Tomatillos
1/2 Broiled Red Tomato
1/3 Cup Fresh Cilantro
1 small garlic clove chopped
1/8 Teaspoon Ground Cumin
1/8 Teaspoon Mexican Oregano
1/8 Sea Salt
INSTRUCTIONS
1. Wash all your vegetables and cut off the stems from the tomatillos and tomato.
2. In a small dish combine all of your seasonings and set aside, also set aside the cilantro.
3. Chop a small garlic clove or set aside 1/4 tsp of ground plain garlic (optional)
4. Broil your Tomatillos and Red Tomato up to 20 minutes until they are fully roasted.
5. To a blender add all the ingredients and adjust the seasonings using the 1/8 teaspoon measurement. Serve with your favorite tacos and tortilla chips, Enjoy!
