西芹炒鮮鮑魚材料:
5-8 pcs - 新鮮鮑魚
1棵 - 西芹
2-4隻 - 香菇
少量 - 彩椒 (三色椒)
半紮 - 韭黃
適量 - 蒜蓉、乾蔥、蔥、薑
醃製鮑魚:1/3茶匙鹽、½茶匙糖、½湯匙蠔油、½茶匙白胡椒粉、1茶匙生粉
炒西芹調味:1/3茶匙鹽、½茶匙糖、½茶匙魚露
馬兜芡:1湯匙蠔油、½湯匙魚露、½茶匙白胡椒粉、½湯匙麻油、2/3湯匙生粉水
一圈 : 麻油(最後放)
做法:
1. 先用擦把鮑魚清洗乾淨,然後去除內臟,切片醃製鮑魚備用
2. 所有材料清洗切好備用
3. 冬菇飛水半分鐘
4. 鮑魚拉油備用(約15-20秒)
5. 料頭炒香,加入彩照,加入西芹生炒,放入炒西芹調味
6. 西芹好之後再放入鮑魚,加入馬兜圈大火炒香收汁,
7. 放入韭黃炒20秒
8. 起鑊前加入一圈麻油就完成。

Abalone isn’t only for steaming. In this video, Chef Po shows how to make a quick, fragrant stir‑fry: tender fresh abalone with crisp celery and shiitake, finished with a glossy sesame‑scented sauce.
Stir‑Fried Fresh Abalone with Celery Ingredients:
5–8 pcs fresh abalone
1 stalk celery
2–4 shiitake mushrooms
A little bell peppers (tri‑color)
1/2 bunch yellow chives
To taste: minced garlic, shallots, scallions, ginger
Seasonings:
Abalone marinade: 1/3 tsp salt, 1/2 tsp sugar, 1/2 tbsp oyster sauce, 1/2 tsp white pepper, 1 tsp potato starch
Celery seasoning: 1/3 tsp salt, 1/2 tsp sugar, 1/2 tsp fish sauce
Slurry: 1 tbsp oyster sauce, 1/2 tbsp fish sauce, 1/2 tsp white pepper, 1/2 tbsp sesame oil, 2/3 tbsp potato starch water
Finish: a drizzle of sesame oil
Steps:
1) Scrub abalone clean, remove innards, slice, marinate; set aside.
2) Wash and cut all ingredients.
3) Blanch shiitake for 30 seconds.
4) Oil‑blanch abalone 15–20 seconds; set aside.
5) Stir‑fry aromatics until fragrant; add bell peppers; add celery and stir‑fry; season the celery.
6) When celery is ready, add abalone; add the slurry; stir‑fry on high heat to coat and reduce.
7) Add yellow chives; stir‑fry ~20 seconds.
8) Finish with a drizzle of sesame oil before serving.
