🍖 Ingredients (for 2 kg Bade ke Paye)
🐄 For Cleaning & Boiling:
2 Bade ke Paye (around 2 kg)
2 tbsp Wheat Flour (for cleaning)
1 tbsp Vinegar
Water as required
1 tbsp Salt
1 tsp Turmeric
🍛 For Masala:
4 large Onions (thinly sliced)
3 Tomatoes (chopped)
3 tbsp Ginger Garlic Paste
2 tbsp Red Chili Powder
1 tbsp Coriander Powder
1 tsp Turmeric Powder
1 tbsp Garam Masala
1 tbsp Roasted Cumin Powder
2 Bay Leaves
4 Green Cardamoms
4 Cloves
1 small Cinnamon Stick
1 tsp Black Pepper
Salt to taste
1 cup Curd (Dahi)
1½ cup Oil or Ghee
1 bunch Fresh Coriander for garnish
6–8 cups Water (for gravy consistency)

🔪 Recipe (Step-by-Step)
🔹 Step 1: Cleaning the Paya
Payo ko ache se gehun ke aate aur vinegar se rub karke clean karein.
Do–teen baar paani se dhoyein jab tak smell chali na jaye.
🔹 Step 2: Boiling
Cooker me paye daalein, namak aur haldi ke sath 8–10 whistle tak ya 1.5 hr tak boil karein (jab tak paye soft na ho jayein).
🔹 Step 3: Prepare Masala
Kadai me tel ya ghee garam karein.
Tej patta, elaichi, laung, dalchini, sabut masale daalein.
Ab pyaaz golden brown hone tak bhunein.
Ginger garlic paste aur tamatar daalein, masale soft hone tak pakaayein.
Ab saare powdered masale (lal mirch, dhaniya, haldi, garam masala) daal kar bhunein.
🔹 Step 4: Add Boiled Paya
Ab ubale hue paye daal kar masale ke sath 10 min tak bhunein.
Dahi daal kar ache se mix karein aur 4–5 cup pani daal kar dum pe rakh dein.
🔹 Step 5: Slow Cook
Dheemi aanch par 40–45 min tak pakaayein taki gravy thick ho jaye aur paye ka jhol creamy aur flavorful ban jaye.
🔹 Step 6: Garnish & Serve
Upar se chopped dhaniya aur thoda garam masala chhidak dein.
Garam naan, tandoori roti, ya khushbu bhare chawal ke sath serve karein 🔥
