Vegetarian Curry Surrender Your Taste Buds

A mild yet tasty vegetarian curry that is as good on a cold winters night as a hot summers day. When you put it in the oven, it's lid off 160 degrees for an hour and a half. Add the water at about the half way stage or once the eggplant has become oozy.
2 Onions quartered
2 Large potatoes chopped in big chunks
1 large eggplant chopped
1 Parsnip chopped
4 - 5 tsp Pataks tandoori paste
2 heaped tsp madras mild curry powder
4 tbsp of extra virgin olive oil
1/2 cup of water (Add to get a nice gravy in the curry)
Server with:
Garlic Roti heated
Coriander leaves to garnish
3 - 4 tsp of lite sour cream
