Ingredients:
Vegetables:
1. Green Papaya (1 Medium) : Taken 1/4th
2. Green Beans : 6
3. Sweet Potato : 1
4. Raw Green Banana : 1
5. Potato (Medium) : 2
6. Bringal (1 Big) : 1/2
7. Drumsticks : 5
8. Bitter Gourd (Small) : 5
9. Ridge Gourd : 1
10. Pointed Gourd : 4
-- Cut all above into small pieces. All lengthwise.
Spices :
1. 1 tsp Panch foron
2. 1 tbsp Black Mustard Seeds
3. 1/2 tsp Salary Seeds (Radhuni)
4. 1 tbsp Ginger Paste
5. Salt
6. 1 tbsp Sugar
7. 2 Dry Red Chilli
8. 2 Bay Leaves
9. Daler Bori (Pulses Pills) : 10-12
10. 1 tbsp Ghee.
Preparation: (1st Stage)
1. Boil all vegetables except Brinjal & Bitter Gourd. Allow boiling for 3 mins more after it reaches boiling point. Strain the vegetables. Keep the stalk aside for further use.
2. Fry dry 1 tsp Panchforon and 1/2 tsp Radhuni a little. Cool it & make a powder of it. Roasted masala powder is ready. Keep aside.
3. Grind 1 tbsp Black Mustard Seeds & 1 pinch Salt and then make a paste of it with a little water. Mustard Seeds Paste is ready. Set Aside.
4. Make a mixture of 1/2 cup Milk & 1 tbsp Rice Flour.
Preparation : (Final Stage)
1. In a big Kadai, heat 3 tbsp mustard oil. Fry Daler Bori, Brinjal pieces, Bitter Gourd one after another till they all turn to golden in colour.
2. In the remaining hot Mustard oil, add 1 tbsp more oil.
3. Add 2 dry red Chillies, 1 tsp Panch Foron & 2 Bay Leaves. Suate a little.
4. Add all boiled vegetables. Add Salt to taste, 1 tbsp Ginger paste, 1 tbsp Sugar & mustard seeds Paste with little Water. Saute a little . Do not stir too much to avoid lumpness. Boil till it turns almost dry.
5. Add Vegetables Boiled Stalk. Cover for 2 minutes.
6. Add all fried Brinjal, Bitter Gord Pieces and Bori. Add Milk-Rice Flour Mixture. Cover for 2 mins for boiling of all other vegetables.
7. Add 1 tbsp Ghee and 1 tbsp Roasted Masala Powder. Mix all well.
8. Sukto is ready. Put off the flame. Rest in standing point for 5 mins.
9. Shift to a serving bowl. Serve with Steamed Rice. It's delicious.
