Ingredients :
1. Ash Gourd : One ; 600gm : Peel and Grate finely. Mix with 1/2 tsp Salt. Rest for 10 minutes.
2. Soya Chunk : 100 gm: Soak in warm water with 1/4th Salt for 10 minutes. Then, squeeze off the water, Keep aside
3. Onion (Medium) : 3 : Chop finely
4. Green Chilli (slitted) : 4
5. Garlic cloves : 5 - 6 : Chop finely.
6. Coriander leaves : a few : Chop finely.
7. Green Chilli (finely chopped): 1
Preparation:
1. In a fry pan, heat 3 tbsp refined oil. Fry the squeezed Soya chunk with a pinch of Turmeric Powder & 1 pinch of Kashmiri Red Mirch Powder till it turns to golden in colour. Shift aside.
2. In the Fry Pan, heat 3 tbsp Mustard oil. Add 2 Dry Red Chilli, 1 tsp Nigella Seeds (Kalo Jeera), 1/2 tsp Cumin Seeds, chopped Green Chilli , 7-8 Curry Leaves, chopped Onion & Garlic. Saute for 2- 3mins.
3. Add Salt to taste & 1/2 tsp Ginger Paste. Saute for 2 mins.
4. Add marinated Ash Gourd (after squeezing well), 1/2 tsp Turmeric Powder,1 tsp Cumin Powder, 1/2 tsp Coriander Powder & 1 tsp Kashmiri Red Mirch Powder. Mix all well. Stir for 2 mins in medium flame.
5. Add 1/2 cup water & 3 slitted Green Chilli. Saute for 1 mins.
6. Add fried Soya Chunks & 1 tsp Sugar. Cover for 2 mins in medium flame.
7. Add 1 tsp Chat Masala & 1/2 tsp Garam Masala Powder. Cooking is complete. Put off the Flame.
8. Garnish with finely chopped Coriander Leaves. Cover & rest for 5 mins in standing point. Shift to a serving bowl.
9. Serve with Steamed Rice, Rooti or Paratha.
